2008 16019 Carneros Pinot noir 12.2% alcohol 
| NEW RELEASE . 700 bottles produced. Some say "Burgundian" when referring to food friendly Pinot noirs, but I prefer "Champenoise". The 2008 reminds me of the red wines from Bouzy in the warmerr part of the Champagne region. Aged in French Oak for 10 months. Pat's Gold Label Napa Valley Red Wine Vinegar 6.0% acidity  | Red Pinot noir, along with a bit of Syrah and some Cabernet wines (from our search for a special wine project) were used in this red wine vinegar. Surprisingly soft for the acidity, it is the perfect marinade or addition to your sauces. Vanilla, sherry, spice and oak characters come from the aging in oak barels. Pat's Gold Label Napa Valley Wine Vinegar 6.7% acidity  | Low alcohol base wines from Pinot noir, Chardonny, and Pinot gris combined with red Pinot nor resulted in a wine vinegar that's not quite red. Flavors are highly concentrated because no water diltion was ever used. Aged in small oak barrels, it has complexity and flavor great for dressings and dippings.
